Avocado Toast with Poached Eggs and Everything Bagel Seasoning

Ingredients
- Ripe Avocados 2 large
- Eggs 4 large
- Whole Wheat Bread 4 slices
- Lemon Juice 1 tablespoon
- Everything Bagel Seasoning 2 teaspoons
- Salt 0.25 teaspoon
- Black Pepper 0.25 teaspoon
- White Vinegar 1 tablespoon
How to Cook
- Fill a medium pot with about 3-4 inches of water and bring it to a gentle simmer over medium heat. Add the white vinegar.
- Place the whole wheat bread in a toaster or under a broiler until golden brown and crispy.
- While the bread toasts, halve and pit the ripe avocados. Scoop the flesh into a small bowl. Add the lemon juice, salt, and black pepper. Mash with a fork until your desired consistency.
- Carefully crack each egg into a small ramekin or bowl. Gently slide the eggs one by one into the simmering water. Cook for 3-4 minutes for runny yolks, or longer for firmer yolks.
- While the eggs are poaching, spread the mashed avocado evenly over the toasted bread slices.
- Using a slotted spoon, carefully remove the poached eggs from the water, allowing any excess water to drain. Place two eggs on each avocado toast.
- Sprinkle generously with everything bagel seasoning. Serve immediately.
