Quick Batata Poha (Flattened Rice with Potatoes)
A light and flavorful Indian breakfast, Batata Poha combines softened flattened rice with tender potatoes, aromatic spices, and a hint of lemon, perfect for a quick and satisfying start to your day.

Ingredients
- Poha (medium thick flattened rice) 1 cup
- Potato 1 medium
- Onion 0.5 medium
- Green Chili 1 small
- Curry Leaves 8-10 leaves
- Mustard Seeds 0.5 teaspoon
- Cumin Seeds 0.25 teaspoon
- Turmeric Powder 0.25 teaspoon
- Salt to taste
- Sugar 0.5 teaspoon
- Lemon Juice 1 tablespoon
- Peanuts (roasted, unsalted) 2 tablespoons
- Cilantro (fresh, chopped) 2 tablespoons
- Oil (vegetable or canola) 2 tablespoons
- Water as needed
How to Cook
- Place the flattened rice (poha) in a colander and gently rinse under cold running water for about 30 seconds until softened but not mushy. Drain thoroughly and set aside.
- Peel and finely dice the potato into small 1/4-inch cubes. Finely chop the onion and green chili.
- Heat oil in a large non-stick pan or kadai over medium heat. Once hot, add mustard seeds and cumin seeds. Let them splutter.
- Add curry leaves, chopped green chili, and chopped onion to the pan. Sauté until the onion turns translucent.
- Add the diced potatoes to the pan, along with turmeric powder and salt to taste. Mix well, cover, and cook on low heat until the potatoes are tender. Stir occasionally.
- Once potatoes are tender, add the rinsed poha, sugar, and roasted peanuts to the pan. Gently mix everything together.
- Cover the pan and cook for another 2 minutes on low heat to allow the flavors to meld. Turn off the heat. Stir in the fresh lemon juice and garnish with chopped cilantro before serving.
