Skillet Honey-Garlic Chicken Thighs with Roasted Green Beans and Fluffy Rice

Ingredients
- Boneless, skinless chicken thighs 1.5 pound
- Salt 1 teaspoon
- Black pepper 0.5 teaspoon
- Vegetable oil 1 tablespoon
- Garlic 4 cloves
- Honey 3 tablespoons
- Soy sauce 3 tablespoons
- Rice vinegar 1 tablespoon
- Water 2 tablespoons
- Cornstarch 1 tablespoon
- Red pepper flakes 0.25 teaspoon
- Green beans 0.5 pound
- Olive oil 1 tablespoon
- Salt 0.25 teaspoon
- Black pepper 0.1 teaspoon
- Long-grain white rice 0.75 cup
- Water 1.5 cups
How to Cook
- Rinse the long-grain white rice under cold water until the water runs clear. Combine the rinsed rice and 1.5 cups of water in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer.
- Preheat oven to 400°F (200°C). Trim the ends off the green beans. In a medium bowl, toss the green beans with 1 tablespoon of olive oil, 0.25 teaspoon of salt, and 0.1 teaspoon of black pepper.
- Spread the seasoned green beans in a single layer on a baking sheet. Roast in the preheated oven until tender-crisp, about 15 minutes.
- Pat chicken thighs dry with paper towels. Season generously with 1 teaspoon of salt and 0.5 teaspoon of black pepper. In a small bowl, whisk together minced garlic, honey, soy sauce, rice vinegar, 2 tablespoons of water, cornstarch, and optional red pepper flakes to create the honey-garlic sauce.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken thighs. Sear for 15 minutes, flipping halfway through, until both sides are golden brown and crispy.
- Reduce heat to medium-low. Pour the prepared honey-garlic sauce over the chicken in the skillet. Bring to a gentle simmer, stirring occasionally, and cook for 7 minutes, or until the sauce thickens and coats the chicken, and the chicken is cooked through (internal temperature 165°F/74°C).
- Fluff the cooked rice with a fork. Divide the honey-garlic chicken, roasted green beans, and fluffy rice evenly between two plates. Drizzle any remaining sauce from the skillet over the chicken.
