Speedy Sausage and Tomato Pasta
A quick and comforting pasta dish featuring rich Italian-style sausages simmered in a vibrant tomato sauce, perfect for a weeknight meal. Fresh spinach adds a touch of green and extra flavour.

Ingredients
- Pork sausages 400 g
- Penne pasta 200 g
- Canned chopped tomatoes 400 g
- Onion 1 medium
- Garlic 2 cloves
- Olive oil 2 tbsp
- Dried oregano 1 tsp
- Fresh spinach 75 g
- Salt to taste
- Black pepper to taste
- Parmesan cheese (optional, for serving) 30 g
How to Cook
- Dice the onion and mince the garlic. If using link sausages, remove the meat from the casings and crumble it.
- Heat olive oil in a large skillet or pan over medium-high heat. Add the crumbled sausage meat, breaking it up with a spoon, and cook until browned, about 5-7 minutes.
- While the sausage cooks, bring a large pot of salted water to a boil for the pasta.
- Drain any excess fat from the pan, leaving about 1 tablespoon. Add the diced onion and cook until softened and translucent, about 3-4 minutes.
- Add the minced garlic and dried oregano to the pan and cook for another minute until fragrant.
- Pour in the canned chopped tomatoes. Bring the sauce to a simmer, then reduce heat to medium-low and let it gently bubble while the pasta cooks, about 10-15 minutes. Season with salt and pepper to taste.
- Add the pasta to the boiling water and cook according to package directions until al dente, typically 8-12 minutes.
- Once the pasta is cooked, drain it, reserving about half a cup of the pasta water. Add the drained pasta directly to the sauce. Stir in the fresh spinach until it wilts, about 1-2 minutes. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
- Serve immediately, garnished with grated Parmesan cheese if desired.
