Spicy Besan Cheela (Savory Gram Flour Pancakes), plated dish

Ingredients

  • Gram Flour (Besan) 1 cup
  • Water 1 cup
  • Onion 1/4 cup
  • Green Chili 1 piece
  • Ginger 1 tsp
  • Coriander Leaves 2 tbsp
  • Turmeric Powder 1/4 tsp
  • Red Chili Powder 1/2 tsp
  • Cumin Powder 1/2 tsp
  • Salt to taste tsp
  • Oil 2-3 tbsp

How to Cook

  1. Finely chop the onion, green chili, and coriander leaves. Grate the ginger.
  2. In a large bowl, combine the gram flour, chopped onion, green chili, grated ginger, chopped coriander, turmeric powder, red chili powder (if using), cumin powder, and salt.
  3. Gradually add water to the dry ingredients, whisking continuously to form a smooth, lump-free batter with a consistency similar to pancake batter.
  4. Heat a non-stick pan or griddle over medium heat. Lightly grease the pan with a few drops of oil.
  5. Pour one ladleful of batter onto the hot pan, spreading it gently in a circular motion to form a thin, round cheela (about 6-8 inches in diameter). Drizzle a few drops of oil around the edges and over the top.
  6. Cook for approximately 3 minutes until the bottom turns golden brown and the edges begin to crisp.
  7. Flip the cheela and cook for another 2 minutes until the second side is golden brown and cooked through.
  8. Transfer the cooked cheela to a plate. Repeat steps 5-7 with the remaining batter, lightly greasing the pan before cooking each new cheela.
  9. Serve the hot Besan Cheela immediately with a side of your favorite chutney or plain yogurt.
