Spicy Peanut Noodles with Chicken
A vibrant and flavorful lunch featuring tender chicken and noodles tossed in a rich, spicy peanut sauce, ready in a flash. This dish offers a delightful balance of savory, sweet, and spicy notes.

Ingredients
- Chicken Breast 12 oz
- Spaghetti or Linguine Noodles 8 oz
- Creamy Peanut Butter 1/4 cup
- Soy Sauce 3 tbsp
- Rice Vinegar 1 tbsp
- Sesame Oil 1 tbsp
- Honey or Maple Syrup 1 tbsp
- Sriracha or Chili Garlic Sauce 1-2 tsp
- Fresh Ginger 1 tsp
- Garlic 2 cloves
- Water or Chicken Broth 2-3 tbsp
- Scallions 2 stalks
- Cilantro (optional) 1/4 cup
- Toasted Sesame Seeds (optional) 1 tsp
- Vegetable Oil (for cooking) 1 tbsp
How to Cook
- Bring a large pot of salted water to a boil for the noodles. While waiting, slice the chicken breast into thin, bite-sized strips. Mince the garlic and grate the fresh ginger.
- In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey (or maple syrup), Sriracha (to taste), minced garlic, grated ginger, and 2-3 tablespoons of water (or chicken broth) until smooth. Adjust consistency with more water if needed.
- Once the water is boiling, add the spaghetti or linguine noodles and cook according to package directions until al dente.
- While the noodles are cooking, heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook, stirring occasionally, until it's golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Drain the cooked noodles well. Add the drained noodles and the cooked chicken back to the skillet (or a large mixing bowl). Pour the peanut sauce over everything.
- Toss well to ensure the chicken and noodles are evenly coated with the spicy peanut sauce. If serving immediately, you can return it to low heat for 1-2 minutes to warm through.
- Slice the scallions and chop the cilantro (if using). Serve the noodles hot, garnished with fresh scallions, cilantro, and a sprinkle of toasted sesame seeds.
